I live near Dadeville, AL on beautiful Lake Martin. I smoke with a Smokin Tex smoker, and have an 1100 pound Klose smoker that I occasionally fire up. But I'm looking to build a small smokehouse, and that's how I found y'all, as it looks like there's a lot of good advice on this site regarding...Instead of having air flow from the firebox through the cooking chamber and out the chimney, the air flows under the cooking chamber, reverses back over the cooking surface and comes out of a chimney on the same side of the firebox. The temperatures are better regulated plus the smoke is cleaner. An Oyler rotisserie smoker is also on premise.
